You know those days you’re just too busy to cook?
This seems like everyday lately for me.
With working 85 hours a week for the past few months, if I am not cooking something for the blog or for cookbook recipe development, I’m not cooking.
I completely admit that I was recently a bit spoiled by ordering delivery, especially for lunch. I usually don’t have time to leave my desk from 8-6, so ordering sushi or ramen sounds amazing when I’m starving at 3pm.
However, that’s A.) not entirely healthy to eat that often and B.) starting costing me a small fortune.
For the new year, I have been concentrating on wholesome, plant-based meals, and realized it’s absolutely doable to eat easy vegetarian meals—even on crazy busy days!
So here are my picks and advice on how to eat healthy, plant-based, AND convenient. It’s easy, I promise.
15 Super Easy Vegetarian Meals for Busy Weeknights
I love convenient, ready-to-eat meals when I’m busy. Because I’m human, and who doesn’t, right?
I very rarely write about or recommend prepared foods, but I love Sweet Earth Foods.
Their meals are so delicious, and they have been saving me from eating horribly when I’m stressed and have zero time to cook.

I’m not a vegetarian, but I do have friends who are. These sound like some yummy dishes.
I am pescatarian but mostly vegetarian. I pinned this for the future I will make many of these.
Today I am in a location where the guest house serves only veg food but it is awesome.I really like to indulge in veg st regular intervals.
