A second smoothie in one week?! Well, in my defense, the last one was technically a bowl, so… today I bring you a delicious, tropical-inspired Coconut Orange Mango Smoothie! Or, what I like to call, Sunshine Smoothie.
But, yes, I think it’s safe to say that I am kind of on a smoothie craze. I’m smack in the middle of an exceptionally busy month and smoothies have been coming to my rescue.
I love doing smoothie prep in the beginning of the week. On Sunday, I peel, slice, and freeze a ton of bananas. I then freeze any other fresh fruit I know I’m going to use, or stock up frozen organic berries/mango/peaches at Whole Foods.
Then on Monday, when I make my morning smoothie, I do 3 large batches of different flavors and put them in individually portioned mason jars. I stick the mason jars in the freezer and smoothies are good-to-go for the week! I defrost them the night before I want to drink them and they’re perfect in the morning. So in the morning, my husband can grab one to take to work (otherwise he wouldn’t eat the entire day) and I know I have breakfast already waiting for me.
It’s been great because it keeps me from eating unhealthy and it is also a huge convenience. I can sip my smoothie and coffee while responding to e-mails/finishing deadlines/writing/needing to pet Cocoa at the same time. (She’s a brat.)
This coconut orange mango smoothie is my newest addiction because it’s so simple to make and so full of flavor. It uses a whole orange, frozen mango, frozen banana, full-fat coconut milk, and coconut oil. That’s it. Five simple ingredients, and it tastes like sunshine in a glass.
Definitely use frozen banana and mango in this recipe. It makes the smoothie nice and frosty without needing to water it down by adding ice. The coconut oil creates a super smooth texture that makes this smoothie nearly taste like dessert. Just be sure to gently melt it and slowly pour it in with the blender running, like you would do with olive oil when making a vinaigrette.
This smoothie really does feel like a treat. You could totally trick your kids into eating this for dessert. I love the tropical combination of mango and coconut and it is especially satisfying on hot summer days.
Use full-fat coconut milk when you want an extra-creamy ‘treat’ and use light coconut milk when you want to save some calories.
Top it with Chia seeds or coconut flakes and pretend that you’re sitting on a secluded tropical beach. Coconut Orange Mango Smoothie, I’m in love. <3

Description

Ingredients
- 1 large orange, peeled and sliced
- 1 sliced frozen banana
- 10 ounces frozen mango
- 1 cup unsweetened coconut milk (full-fat for an ultra-creamy treat or light to save calories)
- 1 tablespoon coconut oil
Instructions
- Blend the first four ingredients in a high-speed blender until smooth. With the blender running, slowly pour in melted (but not hot) coconut oil until combined.

Hi, Cipriana! I defrost them overnight in the fridge, but I make sure to put them in the fridge early enough so it has enough time to defrost. If I take the smoothie to-go, it’s the perfect consistency when getting to work. Just let it sit out at room temperature or on your desk for a little bit and give it a good stir! Enjoy!
