Fried Pickles with Homemade Sriracha Ranch

For the Pickles

  • 1 jar Bubbies dill pickles
  • 1 cup flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon cayenne
  • 1/2 teaspoon garlic powder
  • 3 teaspoons Cajun seasoning
  • 1/2 teaspoon paprika
  • 1/2 cup buttermilk
  • 1 egg
  • Vegetable oil, for frying

For the Ranch Dip:

  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup buttermilk
  • 2 tablespoons chopped fresh chives
  • 12 teaspoons Sriracha
  • 1/2 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper, to taste

Instructions

Make the Ranch Dip:

  1. In a medium bowl, whisk together the mayonnaise and sour cream. Add in the buttermilk while whisking until combined. Whisk in the chopped chives, Sriracha, dill, garlic powder, chopped parsley, and salt and pepper to taste. Cover and refrigerate for at least 1 hour to let the flavors meld.

Make the Fried Pickles:

  1. Slice the pickles into 1/4″ slices and spread them out to drain well on paper towels.
  2. In a cast iron pan or frying pan, heat 2 inches of oil to 375°F.
  3. In a medium bowl, whisk together the flour, salt, pepper, cayenne, garlic powder, Cajun seasoning, and paprika.
  4. In a separate medium bowl, whisk together the buttermilk and egg.
  5. Dredge the pickles in the flour mixture, then the buttermilk mixture, and then back into the flour mixture. Shake off excess flour and drop into the hot oil one at a time, taking care not to overcrowd the pan. You will fry all of the pickles in about 6 batches.
  6. Fry until golden brown on both sides, turning once, about 3-5 minutes total. Remove the pickles from the oil using a slotted spoon and drain on paper towels.
  7. Serve pickles warm with the ranch dip. Enjoy!
