Who doesn’t love a good popsicle or bowl of creamy ice cream on a hot, sticky day?
I certainly do.
My husband has been corrupting me by stocking the freezer with mint chip ice cream and colossal ice cream sandwiches lately.
The other day I had an ice cream sandwich for the first time in several years. And I’m not going to lie to you, it was delicious.
But that 31-year-old metabolism of mine can’t handle much more of those this summer. Which is why I created my own healthy summer treat: Basil Lime Yogurt Popsicles!
Sure, I first created this recipe as a healthier option for those hot summer days when I’m craving ice cream.
But these Basil Lime Yogurt Popsicles turned into so much more than that.
The acidic citrus, creamy Greek yogurt, rich coconut milk, floral honey, and specks of basil turn this popsicle into a refreshing, balanced treat. It is not too sweet, it is pleasantly tart, and it’s a unique addition to your summer frozen dessert repertoire.
Did I mention how easy these Basil Lime Yogurt Popsicles are?
Crazy easy.
Only five ingredients, all whirled in a blender, and filled into popsicle molds.
What makes these popsicles even easier is the use of Dorot’s frozen herb cubes. Have you guys ever used them? I grab mine at Trader Joe’s, in the freezer section. Dorot makes a ton of frozen herbs: garlic, ginger, basil, cilantro, parsley, dill, chopped chili.
No chopping. No prepping. No clean-up. No mess, no fuss.

Healthy Basil Lime Yogurt Popsicles with Dorot

Description
These Basil Lime Yogurt Popsicles are a healthy, fun summer treat. Only five ingredients and easy to make, these pops are refreshing, tart, and naturally sweetened.
Ingredients
- 1 1/2 cups full-fat coconut milk (about 1 can)
- 1/4 cup fresh lime juice
- Zest of 2 small limes
- 9 Dorot basil cubes (3 tablespoons)
- 1/4 cup honey
- 3/4 cup full-fat Greek yogurt
Instructions
Combine all of the ingredients in a blender and blend until fully incorporated. Pour into popsicle molds and freeze until completely set, about 5 hours.
