I recently wrote an article for Healthline on relaxing ‘milks,’ which praised matcha and its many health benefits.
Which made me realize… I do not have enough matcha recipes on the blog.
Time to fix that.
Let me introduce you to this slightly sweet, flawlessly floral Iced Matcha Latte with Lavender Honey. This iced matcha latte works for so many reasons. Matcha itself is earthy and aromatic, which complements lavender lovely. Lavender’s favorite partner-in-crime, honey, sweetens this latte just enough and plays on the nutty, botanic notes.
To make an iced matcha latte, you can simply blend matcha with your milk of choice (dairy, almond, hazelnut, or coconut works great). No need to warm the milk or dissolve the matcha, a high-speed blender will work just fine.
Pour over ice and enjoy.
That’s the basics of it. But, of course, there’s plenty of room for some fun.
We all know that when it comes to iced lattes, a simple syrup is where it’s at. A simple syrup is equal parts water and sugar that’s brought to a boil. The syrup stays in liquid form and is great for sweetening iced drinks since there’s no need for the syrup to dissolve.
A simple syrup is also my favorite way to sneak in additional flavors. For this iced matcha latte, I make a honey and lavender-infused syrup. The sky’s the limit, though. You could replace the lavender with dried hibiscus, vanilla bean, citrus zest (orange works lovely), herbs (try mint!), cinnamon sticks, or anything you’d like.

Description
This Iced Matcha Latte is earthy and floral, thanks to a sweet lavender honey. Refreshing and slightly sweet, it’s the perfect iced drink to sip on a warm summer day.
Ingredients
For the Lavender Honey Syrup:
- 1/2 cup water
- 1/4 cup organic cane sugar
- 1 tablespoon dried lavender
- 1/3 cup honey
For the Iced Matcha Lattes (Makes 2):
- 2 teaspoons matcha powder
- 2 cups unsweetened milk of choice (I recommend almond here)
- 2 tablespoons lavender honey
Instructions
- Make the syrup. Whisk together the water, sugar, honey, and lavender in a small pot. Bring the syrup to a simmer and simmer 5 minutes, dissolving the sugar. Remove from the heat and let the lavender steep in the syrup for about 30 minutes. Strain the lavender through a fine mesh strainer and let the syrup cool. Store the syrup in a clean mason jar in the refrigerator. The syrup will keep several weeks.
- For the lattes, blend the matcha powder, milk, and lavender honey in a high-speed blender until combined. Pour over ice, and enjoy!
Notes
You will have plenty of lavender honey syrup left over for future iced matcha lattes! You can also use this syrup in cocktails, iced coffee, or drizzled over fresh fruit.
