How is your summer going so far?! Isn’t it exciting that we can officially say that now since summer started on Monday? I’m so excited to share this Tangerine Creamsicle Vitamin C Smoothie with you, featuring Tangerine Emergen-C, my favorite flavor.
I love summer. I especially love that it’s the only time in Portland when it doesn’t rain everyday. When summer comes, like much of the Pacific Northwest, I feel like it’s the first time I’m seeing the sun. But, I must say… summer in Portland is magical. The city comes alive, and somehow becomes even more beautiful. Those nine months of rain certainly pay off.
My absolute favorite summer activities include going to the lake, hiking, outdoor movies in the park, and, naturally, the beach. I love to keep active during the summer, and if I can do that while exploring the outdoors and nature, even better! There are countless gorgeous hikes in and around Portland. Pick your poison, Portland has it: waterfalls, wildflower fields, dormant volcanoes, Japanese gardens, wildlife refuges, mountains, and more.
This past weekend, I really felt like I needed to decompress and unplug. My absolute favorite way of doing this is by starting my day with yoga and meditation and then going on a quiet hike with my husband and our Corgi, Cocoa. We started our day with this Tangerine Creamsicle Vitamin C Smoothie, packed some water bottles, homemade granola bars, and dog treats, and headed to one of my absolute favorite hiking spots: Powell Butte.
Powell isn’t necessarily a difficult or steep hike. We couldn’t do a difficult hike with Cocoa; have you seen her short little legs?! But it’s over 5 miles of shaded tree-lined paths, picnic-worthy spots, and the most stunning views of a handful of mountains. You can see Mt. Hood, Mt. Saint Helens, Mt. Adams, Mt. Rainier, AND Mt. Jefferson all on a good day.
Powell Butte itself is an extinct volcanic cinder cone butte, so that alone is pretty amazing.
It was so important to me to get out in nature and to get back to taking care of myself. I have had an exceptionally stressful and hard week that left me feeling run down and overwhelmed.
I also felt like I was getting sick. I just had zero energy.
I use Emergen-C habitually in the winter. My family relies on the stuff like we rely on Cocoa knowing exactly when cheese is being taken out of the fridge. But, for whatever reason, I don’t think to use it enough during the summer. Which is so silly. Why wouldn’t I benefit from vitamin C at any time of the year?!
Just one little package has 1,000 mg of vitamin C and is full of other amazing vitamins and nutrients such as vitamin B6, vitamin B12, magnesium, and calcium. Emergen-C features seven different B vitamins, which are essential for boosting energy; electrolytes, which are amazing for recovering post-workout; and, of course, plenty of vitamin C and antioxidants for immune support. I love using Emergen-C as a post-workout drink, and I’m kind of obsessed with all things fizzy so it works out quite nicely. I also love that it includes no artificial dyes and it is colored with natural beet/vegetable juice.

Tangerine Creamsicle Vitamin C Smoothie

Description
This healthy smoothie is packed with vitamin C, nutrients, and electrolytes; making it the perfect post-workout snack! Plus… it’s pretty delicious.
Ingredients
- 2 frozen bananas, previously peeled and sliced
- 1 orange, peeled
- 3/4 cup unsweetened almond milk
- 1 1/2 cups Greek yogurt
- 1 tablespoon honey
- 2 teaspoons pure vanilla extract
- 2 packages Emergen-C Tangerine
- 1 cup ice, as needed
Instructions
- Blend everything together in a high-speed blender until rich and creamy. Add ice, as needed, to thicken until desired consistency. Enjoy!
